Bread Pudding

Ingredients

  • 6 slices day-old bread
  • 2 tablespoons butter, melted
  • 4 eggs, beaten
  • 2 cups milk
  • 3/4 cup white sugar
  • ½ cup of berries (Strawberry/ blueberry)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Break bread into small pieces into an 8 inch square baking pan. Pour melted butter or margarine over bread. If desired, sprinkle the berries under each layer.
  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread until the bread is covered and soaking up the egg mixture.
  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

Meringue Cake fruit Pavlov

Ingredients

  • The Cake:
    • 1 Cups of Butter
    • 3 Eggs
    • 1 Cups of Sugar
    • 1 Cups of Flour
    • 1/3 Cup Thick Milk
    • 1.5 level teaspoons Baking Powder
    • 1 teaspoon Vanilla Essence
  • The Meringue:
    • 6 large egg whites
    • 1 ¼ cups Icing sugar
  • The Topping:
    • 1  chocolate bars, melted
    • 50 g flaked almonds, lightly toasted
  • The Filling:
    • A can of fruit cocktail (drained)

Directions

  • For the Cake
    • Beat Butter and Sugar until soft and creamy. Add eggs one by one. Add Vanila and mix well. Add flour and baking powder gradually in small quantities and mix well. Add Milk
    • Grease the pan with Butter and cover with flour. Pour the three mixtures alternately into the pan and bake for 20 minutes at 200 degrees centigrade temperature.
  • The Meringue:
    • Preheat the oven to 110C.
    • Whisk the egg whites until you have soft peaks forming gradually, add the sugar while still whisking until stiff peaks form.
  • Filling
    • Open a can of fruit cocktail and drain out the juice.
  • The Assembly
    • Once the cake is cooled transfer it to an open pan.
    • Please the filling on top of the cake.
    • Take the Mirangue batter and layer over the cake covering the fruits and the cake

Bake for 40 minutes and then turn the oven off the oven and leave the meringue to cool inside the oven

Chipotle BBQed Chicken Curry

Ingredients

  • 500 g Chopped chicken
  • 1 Chicken cube
  • 4 Tbs BBQ sauce
  • 6 Tbs Steak Sauce
  • 1 Tbs Chipotle seasoning
  • 1 Cup Water
  • salt
  • ½ Tbs Garlic

Directions

  • Add the Oil, garlic and Chicken.. let the chicken cook in medium heat.
  • Once the Chicken is half cooked, add the rest of the ingredients and let the chicken Cook
  • No serve.

Curry Mushroom Rice

Ingredients

  • 1 Cup of cooked white (Long Grain) rice
  • 1 ½ of water
  • Pinch of Salt
  • 2 Cans of sliced mushrooms
  • ½ Tbs of graham masala
  • 1 Onion chopped
  • ½ Tbs Minced garlic
  • Chopped parsley

 

Directions

  • Place oil, garlic and onions until you sweat the onions (not brown ) only sweat.
  • Add in water, salt, mushrooms, and graham masala and mix it well.
  • Add in the rice and parsley and mix

Chinese Chilli Prawns

Ingredients

  • 500 g of prawns cleaned
  • 1 onion chopped
  • 1 Tbs minced garlic
  • Chopped Parsley
  • For the sauce
  • 6 Tbs Ketchup
  • Pinch of Salt and Pepper
  • 1 cup of Water
  • 2 Tbs Soy sauce
  • 1 Tps Chili powder
  • 1 Chicken cube
  • 1 Tps sugar

Directions

  • Deep fry the prawns and place it aside
  • Take a pan, heat some oil and add in the garlic and onions. Mix until the onions become light brown.
  • Add the items in for the sauce and mix it with the onions.
  • Once you get a think gravy add the prawns and mix well.
  • Sprinkle parsley on top before you serve.

Baked Vegetables in Cheese Sauce

Ingredients

  • Your choice of Vegetables (In this case I used, carrots, potatoes, cauliflower and broccoli

 

For the Cheese Sauce

  • 1 Small Onion chopped
  • 1 ½ cups of Milk
  • ¾ cups of grated cheese
  • Salt and pepper
  • 3 tbls of all purpose flour
  • 2 tbls of butter

Directions

  • To make the cheese sauce, melt the butter in the saucepan, add the onions and sweat it ( not brown just sweat it).
  • Add the milk, cheese, salt, paper and stir it in until the cheese melts.. then add the flour and mix it in. Once the mixture is smooth it is done.
  • Put the vegetables in a oven safe dish and pour the sauce over it.
  • Sprinkle more grated cheese on top
  • Then bake it in 350F for about 35 minutes.

Chocolate Meringue Cake

Ingredient

The meringue:

  • 6 large egg whites
  • 1 ¼ cups Icing sugar

The Chocolate Butter cream filling:

  • 3 Tbs of Coco Powder
  • 1 ½ cups of butter
  • 1 ½ cups of Icing Sugar
  • 1 Tbs of Vanilla Essence
  • 3 Tbs of  milk

The topping:

  • 1  chocolate bars, melted
  • 50 g flaked almonds, lightly toasted

Instructions

Preheat the oven to 110C.

Whisk the egg whites until you have soft peaks forming gradually, add the sugar while still whisking until stiff peaks form.

Line 3 baking trays and draw 3 circles on top of the lining. Spread the meringue within each marked circle. Bake for 40 minutes and then turn the oven off and leave the meringue to cool inside the oven.

For the chocolate butter cream, Beat the butter, Icing sugar, vanilla essence, Milk and coco powder together until the cream is smooth.

To assemble, place a meringue disc on a plate and spread over 1/3 the chocolate butter cream mixture. Place another disc on top of them and spread another 1/3 of the butter cream mixture onto it. Place the final meringue and decorate with the cream, nuts and melted chocolate sprinkled on top.
